Seasonal Recipe: Lentil Soup for Good Luck
In Italian tradition, lentils symbolize luck and prosperity—perfect for starting the year.
Lentil Soup Recipe:
- 1/2 lb. dry lentils
- 2 tbsp olive oil
- 1 small onion, chopped
- 1 stalk of celery, chopped
- 1 tsp. minced garlic
- 1 packet of Chicken Bouillon
- Salt and pepper to taste
- (Optional) 1/4 Ib. smoked ham or sausage
Instructions:
1. Rinse lentils. In a saucepan, heat olive oil and sauté onion, celery, and garlic until tender.
2. Add 4 cups of chicken stock or water, lentils, and bouillon. Bring to a boil.
3. Reduce heat, cover, and simmer until lentils are tender. Add water if needed.
4. Serve warm and enjoy! Serves 4.
